Nothing beats a fresh homemade mochi. It's slightly sweet, marshmallowy soft and chewy.

Mochi is a Japanese rice cake made of cooked short-grain japonica glutinous rice called mochigome. It is pounded until it becomes smooth and pasty. It is a ceremonial laborious process. 

Mochi symbolizes good fortune, long life, well-being and even happy marriage. Long time ago, it was exclusively eaten by emperors and nobles and known as "food for the gods". 

In this video, I will teach you an easy process of making mochi. Thanks to store-bought sweet rice flour, no pounding needed. 

INGREDIENTS :

1 cup sweet rice flour 

1 cup water, room temperature 

5 tablespoons sugar

potato starch (can substitute with cornstarch) 

1/4 teaspoon ube flavoring (optional) 

purple sweet potato jam (kamote halaya)

***you can use any filling of your choice 

***red bean paste, taro paste, Nutella, peanut butter and ice cream are great choices 

***best eaten on the day it is made but you can also wrap it individually and freeze
