Mochi with Oreo filling.
U-TASTE SHOP

INGREDIENTS YOU WILL NEED

100g glutinous rice flour
30g cornstarch
30g granulated sugar
180g milk
20g unsalted butter

Filling:

250g heavy cream
15g granulated sugar
Strawberries
Oreo crumbles

HOW TO MAKE MOCHI
1. Mix glutinous rice flour, cornstarch, granulated sugar and milk until smooth. Sift once, cover it with plastic wrap, prick some holes on the plastic wrap, and steam until fully cooked (about 20-30 minutes). Or you can microwave it until fully cooked (about 4 minutes).
2. After it is cooked, mix the butter in or beat the butter in using the stand mixer. Beat until it can form a ball. Or you can mix the butter in with a spatula and when the dough is cool to touch, knead into a ball. Wrap the dough ball with plastic wrap, and set the dough ball in the fridge to cool for 1 hour.
3. In another bowl, beat heavy cream and sugar until thickened. Set aside. Wash and chop the strawberries into small cubes. Set aside. Crush some Oreo, set aside. You can take any fruits you like as filling.
4. Take the dough ball out, knead and divide into equal pieces. Roll each piece into a flat round piece. Put in whipped cream and strawberry cubes or Oreo crumbles. Wrap it up, and put in a cupcake liner and serve.

It looks so easy and so clean surroundings…i really dont understand how people dont get their kitchen flipped over with flour on floor and counter and bottles caps everywhere when making any sweets/ baking/ cakes.. thats why i dont like making sweets cuz i hate the 2 hours of cleaning afterwards 😅

I just made it today. It was sooo delicious & stretchy. Exactly what i want. Here are some changes that I’ve made.

- I steamed it cos I feel like the microwave is a bit hard to control & steamed for 10’ or some around there.
- I used potato starch cos I ran out of cornstarch.
- I misread the butter amount & pretty sure added like 30- 40’ gram into the dough :))).
- Didn’t have enough starch during the shaping so I just used tad more butter & its very elastic & quite difficult to mold it so I suggest you guys use saran wrap so it’s easier to transfer & store individually in the fridge.
- I used whipped cream with some mascarpone & ate one after giving 5-7’ in the fridge & it was so delicious. Not sure abt the rest of the batch are goin to be harder as I used a bit more butter than the recipe called for but for now it’s a 10/10. Def recommend.

Overseas mochi is a type of so-called Daifuku or Dango or Kyuhi that uses shiratama flour or glutinous rice flour in Japan. Strictly speaking, it is different from mochi, which Japanese people make with glutinous rice.
