Call me crazy, but the way I do asparagus involves a light char on the outside. I like to put them in a pan raw, on the highest heat possible, for about 4 minutes, rotating them every minute. No oil, no water. This gives them a small amount of char, something that I prefer, but I'm sure not everybody does. Then after those 4 minutes, I add 1 tbs of olive oil, shake with lid to coat, and allow to cook for 4 more minutes on medium high heat.

Then I season in the pan and serve. Purely personal preference to get that smoky char flavor, but I have found its the way I enjoy asparagus best. I usually serve them alongside a bone in pork chop with some sort of fried or mashed potato. Occasionally I'll splurge and get some sort of steak to go with the asparagus and potato. Usually Ribeye if I can get my hands on it for less than $7/lb. Always waiting for the sale.

Love the video though, and I did try this way, they turned out amazing. The clip this video is from was very helpful for me understanding other veggies too. Asparagus are popular and relatively inexpensive where I live so definitely a common dinner side for me, and I appreciate variety.

That's why Vichy style is good, as you use a little water and butter, and cook down the carrots or whatever until they're perfectly tender and already glazed by the time they're ready.

Olive oil, salt and pepper. BBQ grill until tops are lightly charred. Then cover for a minute or two until they're the desired doneness.

My parents recently got one of those Chinese steamer inlays for a pod. It looks like a fan with holes, so you can put veggies ontop of it. Taste-wise it's very similar to how it normally tastes. Some better, some worse. But the vitamins are still in the food this way

Steam preserves the nutrients and for most veggies you can steam it in a pot with a little bit of water and a lid, I mostly do this with tenderstem broccoli and kale, takes like 3-5 minutes tops and I find the flavour of the veggie to be really nice.

I like my asparagus with a little char and some texture when biting into to it.

I fry it in a cast iron with some clarified butter, salt, and pepper.

If you don’t think you like vegetables, cook them like this! Boiling gives the worst, least complex flavors and textures for 90% of vegetables, especially non-root vegetables.

I think my veggie intake doubled once I left home and realized that stir frying them was a thing and not just boiling until they’re mush.
