This one - I have to admit - I didn't even try or research before filming, but it turned out to be a home run! The richness of the cheeses worked beautifully with the acidity of the tomatoes and topping it with a spoonful of freshly-made pesto knocked it out of the park. Basil and tomatoes are already a top tier food match, but with that nutty and garlicy punch it was next level.

Traditional recipes are (almost) always the best, but that doesn't mean that variations of those recipes can't be (almost) equally delicious.

Hopefully, no one's Italian granny gets all 'cheesy' with me now :)

Penne Quattro Formaggi

Serves 2

For the pesto:

1/2 clove of garlic
pinch of salt & pepper
20 g hazelnuts
25 g basil
10 g pecorino romano
10 g parmesan
30-50 ml extra virgin olive oil

For the sauce:

160 g penne
sea salt
extra virgin olive oil
2 cloves of garlic, finely sliced
(if you are not living in Taiwan and therefore cannot order my sauce, you can substitute it with 250 g of left-over tomato sauce or canned tomatoes, just crush them up & season with salt & pepper)
2 TBS butter
1 TBS gorgonzola dolce
2 TBS pecorino romano
50 g mozzarella
2 TBS ricotta
1 TBS parsley
