Italian Sausage Sandwich with Basil Aioli

Ingredients:
1 Sweet onion
2 Red bell peppers
2 Green bell peppers
3 tbsp olive oil
½ tsp sea salt
½ tsp black pepper
6 Italian sausages
6 buns
½ cup provolone cheese
1 cup mayonnaise
1 clove garlic
1 cup fresh basil
2 tbsp pickle juice
Sea salt
Instructions:
1️⃣ Preheat the oven to 425°F. Clean and slice the onions and peppers.
2️⃣ Place onions and peppers in a large mixing bowl. Drizzle with olive oil, then season with ¾ teaspoon of salt and pepper. Toss and transfer to a large baking sheet.
3️⃣ Arrange the sausages in the peppers and onions. Place in the oven, lower-middle rack, and cook for 30 minutes, turning sausages halfway through.
4️⃣ For the basil aioli, spoon the mayonnaise into a blender container. Add garlic, leaves and tender stems of the basil, pickle juice, salt and pepper. Blend for 20-30 seconds, until the basil is broken down and the sauce is green. Set aside.
5️⃣ Slice the sausage buns length-wise and arrange on a baking sheet. Sprinkle with grated provolone cheese and bake until the cheese is melted.
6️⃣ To serve, place a sausage link on a toasted bun, top with peppers and onions and drizzle with the basil aioli.
