Ingredients:
Eggs, a dozen
Salt, a pinch
Pepper, a pinch
2tbsp Chives
1tbsp Mustard Sauce
12slices Milk Bread
Mayo Ingredients:
2pc Egg
1cup Oil
Salt, to taste
Pepper, to taste
1tbsp Vinegar
1tbsp Lemon Juice
1tbsp Mustard Sauce
Method:
- Add water in the Borosil Egg Boiler, add the eggs. Remove 3eggs as soon as it hits 7minutes on the timer and put them straight in ice water. Keep the rest inside until 12mins are over.
- While the eggs are boiling, in a bowl add Egg yolks and seasonings. Using a hand blender, start whisking it while adding oil in a steady pour so that everything emulsifies. Once we achieve Mayo consistency we can stop and store it in an airtight borosil jar
- Smash hard boiled eggs in a bowl along with chives, homemade mayo, mustard, salt and pepper. Mix well until combined.
- Take slices of the bread and cut the edges off. Add the egg filling in between two slices, add the whole egg we kept aside before and make it into a sandwich.
- Cut into diagonal halves and enjoy the egg sando!
