My Chinese friend, a chef, also showed must pee the lobster. 1 Chopstick into that same hole, hold it upright, & boy, so much pee got released. That’s to avoid the taste of ammonia😖 in the flesh.

Cooking lobster with cheese mashed that smell, but u r eating ammonia-ridden meat. Nonetheless.

Born and raised in Ct, I have only eaten Maine or Canadian cold water lobsters. Some caught that morning. Absolutely my favorite food by far. I have never eaten warm water lobsters myself, however have a couple of friends that moved to Florida and have eaten the freshest ones available there. They say cold water creatures are much better, but perhaps that is because they were raised with it. I really hope to judge for myself some day. Those warm water guys look delicious.
