The plural of aircraft is aircraft. It does not change. There is no such word as aircrafts. One aircraft or two aircraft, it makes no difference to the spelling. Just like sheep and fish, the word craft or any word involving craft in it’s composition stays the same in singular or plural.

I find it hilarious that I need more certification to fly a drone that I would to fly an ultralight.

This looks like a lot of fun and I'd definitely consider giving this a try when I have the time and money. One thing I'd be concerned about is being careful if you're doing this near an untowered airport with a considerable amount of general aviation traffic. I assume most of these models do not have ADSB-out, radios, and it doesn't look like they have beacon, or position lights, which means that an airplane flying nearby isn't likely to see or hear you.
