If you want your curries to taste just like Indian restaurant you need to do what Indian restaurants do. This is how.

I make this whenever I need a small batch of curry gravy fast. It's easy and it takes a little over half an hour. Perfect for when I'm jammed for time or don't have room in the freezer for a whole bunch of base gravy.

The shopping list:

1 lb yellow onions
2 cloves garlic
1 tsp ginger chopped
1 tsp cumin
1 tsp coriander
1/4 tsp turmeric
1/2 tsp salt
2 tbsp oil
1/4 cup diced tomatoes (or one small tomato)
4 cups chicken stock (or water for vegetarian)
Couple sprigs of cilantro.:

As always, concise, but informative, great video! On my curry journey, I've travelled to the lands of Anjum Anand, Chef Din, Al's Kitchen, Latif, Misty Ricardo and quite a few more, and some great curries have been cooked!
Now I find myself at the dock of Glebe Kitchen, and it's my go to site now for recipes, you also opened my eyes to Japanese curry roux and bottle masala, so I thank you sir.

You nearly got me there with your strawberry jam hack!. It's about as bizarre as adding a del monte fruit cocktail can to tikka masala. My Bamix does a pretty good job by the way, I had it for 10 years and it's still good as new. One thing that really worked for me, is to pass the base through a fine strainer. It gets rid of the gritty parts. I often don't even bother to make the base. Sometimes I just chop the onion extremely fine, and cook it accordingly. The tiny onion pieces will melt away with the tomatoes, tomato paste, passata etc. etc.

I recently was given some frozen paneer cubes. I tried a recipe (lababdar), it said it was the best ever! People I gave some to, said it was delicious but I thought "meh". I'm not doing this recipe again! I'll .look for a Romain recipe instead! I found one, it uses this curry base, but I'm out, so I'll wait toi make it. This base is awesome! Made it before & it makes a huge difference to my curries. Thanks Romain! So people who read this: make it!

How many curries can be made with this quantity? Is it however many cups result - meaning I should portion out into single cups for freezing?

Hi, would you use this quick base for just your restaurant style curry recipes or for your almost restaurant style recipes? I want to try the almost recipes but dont have a microwave.

There are some odd ingredients 🤣 added to some recipes for base gravy but here in the UK, most Indian restaurants add some bell pepper and carrots to theirs.
