How to Make Oven Roasted Asparagus

►INGREDIENTS:
2 pounds asparagus
2 tablespoons olive oil extra virgin
3 large garlic cloves minced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Parmesan cheese for serving, optional

►DIRECTIONS:
1. Preheat oven to 425° F and wash asparagus with cold water and dry thoroughly with a towel.
2. To trim asparagus, snap the end of one spear and cut remaining asparagus same length with a knife. Usually you remove 1.5-2 inches of chewy stringy part.
3. Arrange asparagus on a large rimmed baking sheet in a single layer.
4. Drizzle with olive oil, then sprinkle with minced garlic, salt and pepper. Using tongs, toss to coat evenly. Spread asparagus spears in a single layer with minimum touching each other.
5. Bake asparagus for 12 minutes. Asparagus is ready when it turns bright green, is tender but still has a bite to it. If asparagus is hard to chew, it is undercooked. If it is mushy, it is overcooked.
6. Remove from the oven, sprinkle with Parmesan cheese if you wish and serve warm.
