Made these exactly as shown wow this was fantastic. Parmesan on the fine grade really makes the super crispy each bit was crispy on the outside and soft on the inside. I liked using small yukcon gold potato’s and boiled in a pot of salted water for about 12 minutes until they started to get tender. Then drained and let dry for an hour. Added the mixture no changes his recipe is spot on make sure to not be skimping on the tyme or olive oil. Baked at 425 degrees for 10 minutes flipped then 5 minutes and turned off oven while they continued to residual cook without the oven on just hot. After about 10 pulled them out an owe man what a crunch and flavor. Thank you

Dice potatoes into wedges
parboil into salted water
steam dry
olive oil with paprika and garlic powder thyme pepper salt and black pepper
once you mixed it with your potatoes gently toss in freshly grated parmesan
space out on a grease-proof baking tray
roast them, flip them halfway until they are deep golden and crunch on the outside
