How to beat Barroth solo: The main point is avoiding / countering the charge attacks. Also, if you knock off his mud coat he can't fling it at you (you can also get Muck Resistance from the Bone Armor legs if you want). Tail can be cut, head can be broken into a separate part which can be carved for the Barroth scalp (80%), carving the body gives you chances (8%) for that too though. Best elements: fire (3) and ice (2). Best statuses: poison (3), paralysis (3), blast (3) and fireblight (2).
