Here's my stupid easy, zero waste method of sourdough starter maintenance! Even though I loved eating sourdough, I avoided learning how to make it for a really long time because I didn’t want the hassle of maintaining the starter. Based on everything I read online…having a starter was like having another pet!

All the weighing the flour & water, making sure the water was the right temperature, and exact fermentation times seemed so complicated and then what the heck do I do with all the discard??!!! I also really disliked the idea of wasting any starter or flour for the feedings.

I ultimately developed a super low maintenance approach to maintaining my starter that doesn’t waste any flour. There’s no excess discard, and you don’t have to feed it unless you’ve used part of it for baking!

You can go a lot longer in between feedings also by having a real thick starter. I had mine for one month and I finally fed it and I had no trouble.

I know your method of sourdough starter would work for pancakes as well. Just take your 2 tablespoons and mix it with the amount of flour and milk or buttermilk you’re going to use. Let it sit overnight the next morning make up your pancakes.

Add 4 T of fl 2 to 3 T of water room temp for 10 to 12 hours and back into the fridge until your ready to bake as long as you plan on using it within a week

I think your method would work good on pancakes and waffles etc ..but I did my sour dough starter like the YouTube video on Lisa on Farmhouse on Boone showed . You discard for about one week but after that no more discarding .. and your sourdough starter is matured and ready to be used . When you don’t want to use you keep it in fridge and only feed it the day you want to use it .. no measuring the flour and water because you will just know as you feed it by the consistency of it .. like thickish pancake batter.. Lisa’s method is very easy I think ! Blessings!

I much prefer the recipes that don’t involve discarding from the starter (even though you can use the discard in other recipes). Thank you for sharing your approach! ❤

Hi Rosie, thanks for sharing your bread making talent with us. I'm a total Newbie to bread making and need some very simple steps to follow. I've watched your video on making the starter, but since there's some experimentation involved it's a little hard for me to get the precise measurements and steps correct. You give me hope! LoL. I’m just beginning this journey and feel overwhelmed. I do have a question. May i use any flour to feed my starter? Or does it need to be rye flour? Thank you for putting simple steps to this. My grandma used to make sour dough bread and I don’t remember it being as complicated as I’ve seen in the videos I’ve watched. I believe she was a simple Sally sour dough bread girl like you. 🥰. Blessings from Nevada
