I've started two starters, Jack and Jill. It's not hard to do. It just takes some patience and learning your starters' needs. Like Jack is a growing boy and it took more food for him. Jill, not so much.

My starter is almost 50 years old. I’ve never had to ‘discard’ anything. I keep mine in the fridge. It’s active. Grams? I don’t even measure. I feed it about 1 c flour and little less water. I have one jar. When I want bread of some kind. I feed it a few times to get enough to make bread and make sure it’s really active. I do that in my mixer bowl, keeping my starter jar in the 7:37 fridge and my bread bowl on the counter. I use it at least twice a week.

Yes but how do you start your starter? When do you put it in the refrigerator…day 1 or 2 or when?

Thank.. just couldn't figure out why waste all that good stuff. Do you ever feed sugar to your discard, you know the one you feed right before baking. I had the best sweet sourdough started, I loved it . I like the idea of separating the discard, that way if i want it sweet, my original starter will always be not sweet and I can make sweet and unsweetened sourdough.
So.. again do you feed your discard with sugar or always just water and flour????

I've ordered a starter from a lady local. It is dehydraedcand she's is furnishing instructions to rehydrate it. After that, I would like to follow your instructions

So wait though.. what did you do with the starter that had all the hooch in it? You fed one and put it in the fridge then you had the hooch one that you took a tad from to re activate it but did you disagree the other bit of it or just put it back in the fridge too?
