Ingredients:
For the Soya Chunks:
- Aashirvaad Mini Soya Chunks: 1 cup
- Water: 1 cup (for soaking soya chunks)
For the Rice:
- White rice: 1/2 cup
- Water: 1 cup
For the Burrito Filling:
- Butter: 2 tbsp
- Yellow onion (sweet): 1/2, chopped
- Garlic: 2 cloves, minced
- Paprika powder: 1.5 tbsp
- Ground cumin: 1 tsp
- Black pepper: 1 tsp
- Ground cloves: 1/4 tsp
- Freshly ground nutmeg: 1/4 tsp
- Baked beans: 7 ounces
- Cilantro: 2 tbsp, chopped
- Tortilla sheets: 4, warmed
- Avocado: 1, mashed
Cooking Method:
1. 🌾 Preparing the Rice: Soak Aashirvaad Mini Soya Chunks in water for 10 mins. Meanwhile, bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed (20-25 mins).
2. 🧅 Preparing the Burrito Filling: Melt 1 tbsp butter in a large skillet over medium heat. Add chopped onion and garlic, and sauté until translucent (5-6 mins). Add the remaining butter, paprika, cumin, black pepper, cloves, and nutmeg. Cook for 2 more minutes, stirring frequently.
🍳 Cooking the Soya and Beans:
In a separate pan, squeeze excess water from the soaked mini soya chunks and add them to the baked beans. Simmer for 10 mins on low heat to let the flavors blend. Stir in cilantro and let it sit until it wilts.
3. 🌯 Assembling the Burrito: Fill the warm tortillas with the spiced paste, add the beans and soya mixture, followed by the rice and mashed avocado. Fold the tortillas from the sides and roll them up tightly.
4. 🥑 Serving: Serve the burrito with extra mashed avocado on the side for a creamy finish.
