Not only are red lentils high in protein and iron, they’re also lower in fat and super budget-friendly if you buy in bulk.

I’ve never liked that tofu comes packaged in plastic, so this recipe has come in clutch as of late.

Red Lentil Tofu:

• 1 cup red lentils
• 4 cups water
• 1/2 tbsp salt

1️⃣ Soak lentils in bowl of water overnight.

2️⃣ Drain and rinse lentils. Bring two cups of water to a boil and add to bowl along with rinsed red lentils. Allow to sit for 20 min. Add to blender and blend until smooth.

3️⃣ Add to pot and bring to boil on stovetop. Reduce to medium low and whisk continuously.

4️⃣ Add salt and two cups water and continue to whisk until creamy, thick consistency is achieved (about 8-10min).

5️⃣ Remove from heat and pour into large baking dish. Allow to cool at room temp and then cover and place in refrigerator overnight.

6️⃣ Cut into cubes and enjoy as is OR try seasoning with coconut aminos and baking in oven at 400F for about 15min, tossing halfway through.

No need to soak overnight, these lentil are not so large. Just soak in boiling water for 15 minutes or so and then blend

How mushy are they once cooked? I'm sure they aren't as firm as regular tofu
