Pitts & Spitts Maverick 1250 - Brisket

In this video I smoke up a brisket on the Pitts & Spitts Maverick 1250 using butcher paper to wrap. My initial thought was to wrap in foil with some beef consumme but the bark didn't get to where I wanted it so I used the pink butcher paper. The rub combo of SuckleBusters Texas Brisket Rub, SuckleBusters SPG, and Tailgaters BBQ Party Rub gave this brisket some amazing flavor and I will for sure be using this combo of rubs on beef again! To be 100% honest the flat on this brisket was a bit dry to me but the point was money and whole thing was bursting with flavor.

This was the first time that I used the Bear Mountain 100% oak pellets and I really liked the flavor they gave off! Holy beard! Great video. I’m throwing a brisket on tomorrow. Found a prime cut priced as a choice brisket for $2.89 lb. Its been a while since I had a brisket on so I’m pretty excited.

Great cook Brain... Since Sam's is the ONLY place within 75 miles that you can get Prime Briskets, I will buy Choice if it looks good... I have started injecting the consumae into them. I like it a lot better than broth... I can thank you for the consumae idea... Have you injected it into any Briskets??? 68 degrees here in W. KY and calling for mid 70's next week... After the cussing I gave all that snow and cold and told it to go back and stay with you it looks like we are done. They say maybe 2-3 days of 30's week after next then we should be done with the cold... I done got flowers sticking their head up. I need warm weather... LOL

I always separate my brisket, I cut the point from the flat.

That’s not much of a hang or pull on the flat. Dry flat is disaster. The idea of getting the two muscles on a packer brisket is such a risk.
