It is a cuban tradition to roaster a whole hog for Noche Buena on December 24th . I have been cooking whole hog since I was a kid. The pig doesn't have to be cooked in a Caja China but it makes it so much faster and less work leaves more time for the other holiday traditional. drinking while cooking

Have the large version, it is awesome slow cooker for whole hogs, chickens, turkeys, etc.

One more way to enjoy a different way to prepare all sorts of food, especially whole hog.

Clean up is quite easy actually.
This is a 'roasting box' not a smoker so having no smoke is to be expected.

Yeah... it was kind of a pain. Not too bad but a lot of grease because the drip pan can spill easily
