I started roasting pigs in 2015. I’ve found The best and easiest way to roast a pig is with the Caja China

The story behind La Caja China, there was a young boy living in Cuba, in Cuba there’s a Chinese population, and he would watch them cook in this box. At some point, his family left Cuba and moved to the United States. When he was old enough, remembering how they would cook in this box, be built and patented it, and in honor of the Chinese, he named it after them, La Caja China, translated “The Chinese Box”

Shopping List Ingredients:
Whole pig
Adobo
Sazon
Garlic
Sour Orange Juice or Mojo

60 Lbs charcoal
Lighter fluid
