If you’re a garlic fiend garlic scape pesto (which is like the top green root part of garlic) is amazing! I substitute pine nuts for almonds since pine nuts are so expensive/hard to find

cooking is such a personal thing. my dad gave me that same exact little food processor many many years ago for christmas. I asked for one and remember being just a little disappointed because the one he bought was so tiny. After he died it became one of my most prized possessions. Great for pesto.

For pan con tomate get a garlic clove and rub it onto the warm bread before you add the tomato topping add a drizzle of oil and a little salt

Pan con tomate is DELICIOUS. My friend is spanish as well and her family toasts sthe bread with olive oil, them rubs a garlic clove into the crusty bread. After that, they rub a cut in half tomato on it (after squeezing the seeds out). Rubbing the meaty tomato on the bread makes it so that the skin is left behind ☺️ so delicious!

omg thank you!! I always wanna use the carrot greens but my parents insist on tossing them. My grandma used to make me beet greens as a kid because I hated beets but I LOVE the greens so carrot greens just look delicious to me 😅

My rabbits love carrot tops! Besides bananas, carrot tops are their favorites. It’s so hard to find them in the store now.

The oil in pan con tomate goes directly on the bread. The salt is added only once the tomato is on the bread, to prevent it from becoming watery. Garlic is always optional.

For pan con tomate, or pan tumaca, strain the grated tomato. It makes a difference. The bread doesn't get soggy and you can layer more on top. And be sure to scrape fresh garlic on top of the roasted bread! It's also delicious if you to it with jamón ibérico or jamón serrano and a slice of a mild cheese. It's such a great breakfast!

If I could presume to offer a tip: with greens like carrot tops, basil, mint, etc. if you stick them in a bag or foil wrap with a damp paper towel and refrigerate them, you’ll get an extra couple days of freshness. Nice vid; thanks for sharing

I'm careful of bread in the US but when I know the grain source and baker, I indulge. We used carrot tops a lot when I was a kid but I'd never seen them in pesto (great call). Life is right when good olive oil, bread, basil and cheese align.

Wild garlic pesto!
I forage as much as I can when it's young and make a hot version (standard) and a creamy version (add walnuts).
Also pickled garlic flowers (while he buds are still closed 🥰
