Dooku spanked Obi Wan with ease every time they fought. Fisto would give Dooku a harder fight than Obi Wan, though he'd also lose.
Obi Wan is too vulnerable to force attacks, which Dooku can exploit if he fails to defeat him in sabre combat. The best Obi Wan could do against Dooku is use Soresu to defend against lightsabre attacks until Dooku resorts to using the force to throw him about. Obi Wan doesn't really offer any attacking threat to Dooku. Whereas Fisto's fury would be of concern to Dooku who struggles with high intensity attacks and while I think he could use his experience and Makashi's natural advantages over Shii Choo to eventually defeat Fisto, I think it's a fight he'd struggle with.
I also think he'd struggle against Plo Koon more than he would against Windu as Plo's mastery of Djem So is ideal for defeating Makashi, which is also how Anakin defeated him.
Obi Wan could defeat many of the jedi that would do better than him against Dooku but those same jedi are better equipped to take on Dooku for various reasons.
Having said that, I think Dooku would be the likely winner against all jedi other than Yoda, peak Anakin and maybe Plo Koon.
Even Windu would probably lose to Dooku, though that's a tough call.

Plo Koon would be a high-extreme diff, he was probaly the best council member in duel. Not including Windu and Yoda.
Also Obi Wan would be a mid diff.

In legends, Dooku was getting extremely tired by Anakins strong hits and they were both kinda holding back their power, after sidious taunted Anakin, Dooku realized he might die here, he went all out on Anakin but his strong hits and his better dueling was destroying Dooku which lead to his death, I’d say IH Anakin high diff or extreme
