Sous Vide WHOLE PIG Experiment!

For today's cook I am going to try to cook a whole pig Sous Vide. This is and experiment, as always I love trying new things and cooking a pig Sous Vide has always been on my bucket list. And today I have finally been able to do it.

HOW TO COOK WHOLE PIG SOUS VIDE
I cooked it for 13hrs
10hrs @ (155°F / 68°C)
3hrs @ (165°F / 74°C)

* INGREDIENTS * I used for this sous vide cook.

* Guga's MOJO Sauce *
15 cloves garlic, minced
1 teaspoons ground cumin
2 cup sour orange (you can use regular orange)
1/2 cup lime juice
1/4 cup extra-virgin olive oil
1 orange, zested
1 lime, zested
1 tbsp granulated sugar
1/2 red bell pepper
Salt and freshly ground black pepper to taste (I use 2 tbsp of salt and 2 of black pepper)

* Allow this Mojo Sauce to sit in your fridge for at least a week, it tastes better! Mine has been on my fridge for over a month.

Guga, I love how succinct the beginning of the videos are. Instead of suspense and yada yada yada...you have hands on the meat, man! The rest of the video comes naturally. Some YouTubers really need to learn from you! Cheers
