Sous Vide WHOLE PIG Experiment!

For today's cook I am going to try to cook a whole pig Sous Vide. This is and experiment, as always I love trying new things and cooking a pig Sous Vide has always been on my bucket list. And today I have finally been able to do it.
HOW TO COOK WHOLE PIG SOUS VIDE
I cooked it for 13hrs
10hrs @ (155°F / 68°C)
3hrs @ (165°F / 74°C)
* INGREDIENTS * I used for this sous vide cook.
* Guga's MOJO Sauce *
15 cloves garlic, minced
1 teaspoons ground cumin
2 cup sour orange (you can use regular orange)
1/2 cup lime juice
1/4 cup extra-virgin olive oil
1 orange, zested
1 lime, zested
1 tbsp granulated sugar
1/2 red bell pepper
Salt and freshly ground black pepper to taste (I use 2 tbsp of salt and 2 of black pepper)
* Allow this Mojo Sauce to sit in your fridge for at least a week, it tastes better! Mine has been on my fridge for over a month.
