This are NOT your regular Sous Vide eggs, these 3 are something else🤓 In a fancy restaurant, this dish would probably be call something like "3 eggs"... And you would be left to wonder: "but, where're the eggs?"...🤔 Well, the yolk part is pretty obvious, but trust me, the taste is not ordinary. Try this with the egg yolks marinating in a white miso/mirin/sake mixture for 3 days, and a wasabi instead of mustard mayo. (Not my original idea but a follow up on a recipe from Masaharu Morimoto).

Ahhh the 3 star Jean-Georges Vongerichten classic.

I copied their brioche caviar and chives sandwich (random homecooking)
This method of preparing eggs is the most delicious.

Idk I have the feeling ur forcefully trying to make sth abstract and modern but the overall flavor profile and taste gets lost along the way the texture of the yolks are all the same so no diversity as an amuse bouche or entree itd be a bit underwhelming


Still like ur work and the comprehensive reviews on modernist cuisine ingredient stables
