you’re supposed to get a creamy and custard-y yolk. do 63 (64 chefs trick) degree celsius two hours. the whites won’t set but the yolk will, that’s what special about the sous vide. can’t get it in “normal” boiling water, the whites cook too fast

Can't remember what temp and time I used to use, but I prefer this method to get something close to poached egg whenever I make eggs bene for the family.

Though *technically* not sous-vide, it's definitely the best method for perfect poached a/k/a onsen tamago eggs every time. Bonus, they're fully pasteurized.
