"If anyone tells you beans aren't healthy don't listen to them" I love your defense of beans.

Just wanted to share something I made while drunk the other night. Easy burritos. Half a bag of frozen Potatoes O'Brian (or called Hash Browns with onion and peppers) A whole bag of frozen peppers and onions (fajita veggies), A can of Black beans and a can of corn. I also used some oil and minced garlic from a jar. SUPER easy. I have so much I'm going to freeze some. I'm not vegan so I had an egg and some cheese with mine, but for vegan you could leave that out and add more beans and avocado and greens, anything you want really. It was cheap and easy enough to make while drunk and crying. Oh yeah, I put spices and jared salsa in there too.

upcycling leftovers into new things is a budget stretcher. I just took leftover spanish rice and pinto beans and put in the food processor with crushed corn chips, oregano, cilantro, onion and garlic powder and some pickled jalepenos with their brine. Pulsed till blended (leave chunky for texture) and make into patties. Air fry 7-15 minutes depending on size and your fryer ( or bake). I served on a bun with cashew ranch and some roasted anaheim chili and lettuce. I do this bean/grain burger combo all the time with different varieties and spice profiles (soybeans and brown rice with green curry; white bean-sorghum and pasta sauce and italian seasoning, etc). And mushrooms of all varieties have gotten alot more expensive where I live (seattle), but button mushrooms still the least expensive of the varieties

My mind is blown with the hummus pasta sauce! Why didn’t I ever think of that?!! And those burritos look 🤌🏼

I've never thought of doing burritos as meal prep. Made a batch of these and froze them, and I'm microwaving from frozen to eat - they're delicious!

Wonderful. So practical. I try to be a raw vegan, but this is supremely to do in mid-west USA in the winter. All those raw vegan youtubes made by people who live on islands and the mountains of Hawaii. So I combine raw vegan with the practicality of Rose and have come up with an excellent diet. Have been doing this for years. Love you, lady friend.

Oyster and cremini are fairly cheap here in Croatia. Cremini are the cheapest (and very flavourful and useful), but oyster mushroom are almost as cheap.

Oyster mushrooms are super super easy to grow and clone. You mix some water with some wood bbq pellets like making a dough, it becomes like thick mash potatoes of sawdust, then you crumble in some of the spores, then you jam it in a plastic bag, twist the bag up tight and then poke a few holes in the bag

I absolutely love using hummus to make a creamy pasta sauce!! It's so flavorful, quick and easy! Sometimes I use my homemade hummus to make the pasta sauce and oh man 🙌🏻☺️ it's so wonderful

Rose doesn't mess around! These recipes look amazing and it's proof you don't need to spend a lot of money to eat plant based.

Free foraging! I always find oyster mushrooms in my local woods. As well as chicken of the woods, hedgehog, and chanterelle! 🍄💜

I had the black bean rice burrito for lunch today and am finishing up the spaghetti dish for dinner. Sooo sooo good!

Cremini and button mushrooms are CRAZY expensive in Korea (where I currently live). Here, the cheap mushrooms are enoki and king oyster. Occasionally I can find some cheap white button mushrooms at one of the traditional markets, but apart from that, the aforementioned are the cheapest.

I'm living in Cambodia and oyster mushrooms are pretty cheap which is amazing. On the other hand, canned beans (or any canned stuff) are so expensive and I relied a lot on canned beans before so oh well. You really can't have it all
