for anyone curious, the video says “2 cups or 140 grams” while John says 240 grams of flour; 240g is 2 cups of flour :)

I love gnocchi. Actually, I make mine with _both_ potato and ricotta. I also use fresh thyme. I push the potatoes through a ricer when they're still hot. It makes for a nice consistency gnocchi. Not too dense, just firm enough to hold up for the pan frying in butter, which I do after boiling. Finish it with peas, parmesan and lemon zest. To this day, one of my all-time favorite things to make. It's so fresh, light and vibrant.

There used to be a restaurant in my city which had Pumpkin Gnocchi. There were wonderful! I miss them even now, years later. Thank you for the video and I would like to have the ricotta version.
