My old man boils red potatoes, with parmigiano reg with some grated nutmeg and two egg yolks… salt and pepper to taste with a gorgonzola/ragu sauce… fkn heaven would love to see a rendition

Serious question:

if you’re mashing the potatoes anyways, could you just roast them in smaller pieces to reduce the time in the oven or is there any advantage in doing them whole?
