Ingredients:
For the Roll-Ups:
2 medium eggplants, sliced

For the Filling:
1 firm tofu
1 tbsp nutritional yeast
1 tsp miso paste
1/4 tsp salt
1 tsp dried oregano
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 lemon, juice
1 cup baby spinach

For the Topping:
Tahini
Walnuts
Parsley

Steps:

Cut the eggplants into even slices and grill until they show color. Brush with tamari sauce and grill for another minute.
Blend all filling ingredients in a food processor until a ricotta-like consistency is achieved.
Let the eggplant slices cool and fill with ricotta mixture. Roll up carefully and plate.
