Several points to consider:
1. Polk did not know there was gold in California. Gold was discovered at Sutter's Mill in 1848.
2. Texas - which had been a sovereign nation for 9 years - claimed the Rio Grande as its southern border. By annexing Texas, the US was accepting the Texas position on the southern border rather than the Mexican position.
3. California was essentially an independent territory at the time. In fact, California has also declared independence in 1836 but couldn't get its act together. Mexico was unable to either defend the state or enforce laws. California officials routinely ignored the central government and suffered no consequences. The most recent effort to tame California involved sending an 'army' of 300 ex-convicts in 1840. They were soon sent packing by General Castro.
4. The Monroe Doctrine limits European adventurism in the Americas. It does not limit the US. Checkout the Roosevelt Corollary.
5. Mexico often appropriated the property of foreigners or failed to repay debts. The Pastry War (1838) is one of the standouts here. The French invasion of the 1860s was started because the Mexican government was reneging on debt service. US citizens had been among those to lose property to corrupt Mexican officials. Claims dating back to the 1820s had not yet been resolved. The US was offering to settle outstanding claims and pay millions of dollars for lands that Mexico could not govern.
6. The war started in 1846, not 1847.

In 1781 before Mexico had its independence the Yuman tribes drove the Spanish out of the Yuma area the western part of the US was surveyed by the Spaniards but they only occupied the West Coast and had no troops in the interior the Spanish never returned to Yuma 50 years later Mormon troops started a fort and treaties were signed with the Quechan and Cocopah
