✨ ROAST LAMB ✨ it’s bloody cold in Adelaide (Aussie cold haha) and I’m just craving warm, hearty meals 😍 This roast with DELICIOUS veggies and salad makes for the PERFECT dinner 🤩

This is how I’m make mine! 💪🏼

1️⃣ Remove fat off lamb leg (optional but…. Do it lol) and pierce deep holes in the lamb. Place chopped garlic into the holes SUPER deep. You want a lot, maybe 5-6 large garlics.
2️⃣ In the same holes, add your herbs (rosemary, oregano, parsley, sage). You want to push these far in too so that all the meat gets seasoned. You want LOTS of herbs.
3️⃣ Salt and pepper (and I mean a LEAH amount!!!!) because lamb really needs it. Add some dried oregano and lemon rind for extra flavour. If you’re cooking lamb, and you can’t see the salt flakes…… ya need more!! 🤣
4️⃣ Add your chopped veggies and season those too. Then add 2-3 cups of liquid stick to the bottom of the pot. These veggies will be soft, so if you’re more of a crispy roast veggie type of person, then add them in a seperate pan later!
5️⃣ Place in the oven on 150 for 7-8 hours with the lid ON, opening once to check the liquid (if it needs more add more!) and to pour the liquid over the lamb.
6️⃣ Use the leftover juices in the pan to make a gravy! Use a little corn flour mixed in with some water and mix it in and stir until it thickens!!
