As Dark chocolate maker in Costa Rica I can comment the following:
Everything the man is saying is true, he is missing something absolutely important though... look for PURE chocolate with only cacao butter, avoid the palm oil or lecithin in excess.
There just a few pure Dark chocolate available in the world, you need to look for Dark chocs with ONLY two ingredients: Cacao and Sugar PPEERRIIOODD.
Avoid chocolate with labels that say : I might have this or it might have traces of that... that is lying of the worst kind!
Enjoy pure chocolate, you will not regret!

Excellent info. I've been learning over the last several weeks that cocoa is essentially heart medicine when consumed correctly.

I bought a melanger, bought some milk powder, coacoa butter, and cocoa nibs. I now make my own sugar-free chocolate...it is DAMN TASTY...although I do have to say I eat more then one square.

Dark chocolate above 90% taste way to too bitter. What you can do is break them up and put them in plain Greek yogurt and it’ll lessen it. Plus you get the added benefits of probiotics
