Why are the regular grave glovewort so far in the game when compared to the rare ones which are meant to upgrade your rare summons are like 10x easier to get then getting those ones

Slightly off topic, I heard that after besting the final boss you can keep playing before going to NG+, but are there things (items, questlines, areas) that I will be locked out of (without spoiling too much)? I'm always too scared I might miss something and then having to play everything again in NG+ to get it
