Cottage Cheese Alfredo Sauce - HIGH PROTEIN Weight Watchers Pasta Sauce - Trying Pinterest Recipes!! I love Alfredo sauce and have been wanting to try making a cottage cheese alfredo sauce for a long time. I am glad I did. This high protein sauce uses cottage cheese instead of cream and it cuts the calories way back without cutting out the flavor! I adapted a recipe from pinterest to make this one, link to the original recipe down below. Weight Watchers Points & Calories/Macros and additional nutritional information Included down below!

Ingredients:
1 1⁄2 cups 1% low fat cottage cheese
3⁄4 cup Plain unsweetened almond milk
1⁄2 cup Grated Parmesan cheese
1 Tbsp Jarred minced garlic
2 Tbsp Olive oil
2 Tbsp Cornstarch
4 Tbsp water
8 oz, unprepared Barilla Whole Grain 100% Whole grain linguine, dry
1⁄8 tsp Black pepper (or to taste)
1/2 tsp salt (or to taste)
1⁄8 tsp Ground nutmeg

Add the cottage cheese, milk, and Parmesan to a blender or food processor.
Blend on high speed until creamy, thick, and smooth. about 1 minute. Set aside.
Cook the pasta following the packaging instructions for al dente pasta. Drain, reserving about 1/2 cup of the pasta water. Set pasta aside.
In a medium saucepan, over medium heat, add olive oil and sautée the garlic until fragrant, about 1 minute. Pour in the cottage cheese mixture, and stir. Bring to simmer. Once it begins to simmer, reduce the heat to low. The sauce will separate out, and be watery while the cheese will be lumpy, this is normal.
In a small bowl, whisk cornstarch with water together to make a slurry. Whisk in the slurry to the sauce and continue to cook and whisk occasionally until the cheese breaks down and the sauce thickens and becomes creamy. This took me about 20 minutes. Stir in nutmeg, pepper and salt to taste. Add cooked pasta to sauce and stir until well coated. You can add pasta water to thin out sauce if you wish and get desired consistency.

I've been so busy (life), haven't been watching ANYTHING!! I love Alfredo, I made one a few wks ago with laughing cow cheese and it was delicious!

Delicious!!😋 Worked out great with the extra water from the pasta and some salt! I used Maple Hill reduced fat 100% grassfed Organic

Good morning, Alicia! Honestly, if I had made this without the video and saw the sauce so separated, I would have dumped it!
You gave me a lesson on patience in the kitchen!! THANK YOU! Anyway, I'm making it and using the tip of keeping some of
the pasta water on the side. The pasta had to be pretty darn good, because hubby found a way to gobble it down by
cutting it up, hysterical!! A true foody!! He is definitely my trusted critic on the recipes!! When you give it a taste, well
that really seals the deal for me🤣 I'll be making this Sunday. BTW, I find when I use Whole Wheat Pasta the high fiber
absorbs all the moisture which tends to end up dry anyway. I use it for a healthy choice, certainly not for taste Lol

I will definitely use the pasta water because I like “floating” sauce…lol. (My kids used to tease me asking for a straw with Mac & cheese…lol)
I love cottage cheese so graininess wouldn’t be an issue, but good to know patience is required. 😊

I'm going to try this but replace the cottage cheese with lite ricotta & fat free 1/2 & 1/2 instead of almond milk. Maybe it won't be so grainy. But great idea!
