High Protein Three Ingredient Alfredo

This will blow away any high protein or “light” Alfredo you’ve ever had. Actually… it may blow away any Alfredo you’ve ever had in general. The crazy thing is - without any chicken or meat whatsoever - this clocks in at 36g of protein per serving. Just for the pasta + Alfredo sauce!

Check out my digital cookbook (link in bio) for more recipes like this one! I included this recipe in the “additional notes” section of my original Alfredo recipe that is included in the book!

Makes 4 servings:
510 Calories
36g Protein
78g Carbs
7g Fat

Ingredients
320g Protein penne (or pasta of choice, majority of protein comes from the sauce)
12oz evaporated fat free or 2% milk
350g 2% cottage cheese
100g Parmigiano Reggiano
Optional/to taste: salt, pepper, garlic

Add evaporated milk, cottage cheese and parmigiano to a bowl and microwave for 60 seconds. This helps the sauce get smooth when blending. Blend the sauce for 1-2 minutes until completely smooth. Add to cooked pasta in a very low heat pan, let sit for ~10 minutes. Remove from heat and let cool for another 5-10 minutes, and enjoy!

For anyone thinking about making this I have made it so listen to this. This recipe is probably the best tasting low cal high protein recipe I’ve ever had. I think the thing that makes it so good is the Parmigiano reggiano but it doesn’t even taste healthy in the slightest bit and it’s only 3 ingredients. Make it without a doubt. Also the higher protein pasta doesn’t taste any different from regular Barilla penne so I’d recommend to use that too. They have them at almost every grocery store

Alright I did some math (please correct me if needed)
The total amount of calories for this recipe would be about *2134 cal* since the pasta was about 1330 for the whole box, 400 for the entire cottage cheese, the evaporated milk was about 360, and the 2 tbs of Parmigiano was 44 calories. Keep in mind different brands may differ. His brands were +Protein Penne from Barilla, Lowfat Cottage Cheese from Organic Valley, Carnation Evaporated Lowfat 2% milk from Nestle, and generic brand Parmigiano Reggiano.
However don't let the number 2134 scare you since if you had about a cup serving of this it would likely be around *474 calories per serving*, since you get around 4.5~4.7 cups of food based on how much you steam or waste in the containers. Please remember these are estimations real cooking, eating, and digesting factors ma not accumulate the same calorie intake as my number. Have a great day!

Blend up cottage cheese, Fair life milk, paramsean, and spices of your choice for a lower calorie sauce. Use Greek yogurt to replace the cream cheese for more protein.
