HIGHER PROTEIN ALFREDO SAUCE ✨ but you’d never know it was any healthier cause it’s so good. And easy to make!

Ingredients:
1 cup 2% low fat cottage cheese (226 g)
1 cup whole milk (240 ml)
2 oz parmesan cheese (56 g) freshly grated, about 2/3 cup
2 tsp Italian seasoning
1/2 tsp salt
1/2 tsp pepper
1 tbsp butter
1 tbsp flour (optional)
2 cloves garlic minced

Instructions:
1. Heat a large skillet on medium low. While you wait for the pan to heat up, add the cottage cheese, milk, parmesan, Italian seasoning, salt and pepper to a blender and blend until smooth.
2. Add the butter to the hot pan and melt. Sprinkle in the flour and whisk to create a roux, cooking for just a few seconds. Add in the minced garlic a cook for just a minute more, until fragrant.
3. Pour in the blended mixture and whisk to combine, making sure to get in all the corners of your pan so nothing sticks to the bottom. Continue to gently cook on medium low heat, stirring often, for 5 minutes. Remove from heat.
4. Taste sauce and add any more salt or seasonings, if needed. Serve with your favorite pasta, spaghetti squash, however you love!

Notes:
•Consistency: Don’t over-reduce/cook the sauce – it thickens more as it cools.
•Flour: Since this is lower fat than traditional Alfredo, I add the flour to thicken (I like a thick sauce). If you like a thinner sauce you can skip this step.
•More protein: Add grilled chicken, shrimp, or meatballs to your Alfredo pasta or spaghetti squash for even more protein.

I made this but when it cool down it became very grainy after cooling down. How do I make it so that it still stays smooth even after I refrigerate the leftovers

Spoiler. You definitely will tell that it is healthier. Don't get me wrong. cottage cheese alfredo sauce is pretty good for how healthy it is. But its not even close to a good alfredo sauce, of even an okay alfredo sauce.

Did you just blend the pre-grated cheese (which has cellulose as a separator typically)??? My goodness…
