I appreciate that you’re going nice and slow, but most amateurs should be advised to turn down the torque on their drill so they don’t twist the head off the anchor.

My drywall anchor is in the drywall but stops halfway, should I push harder? It feels like there is something spongy inside the wall

Always poke the wall before drilling into it. You never know what can be there. Wires, piping and I know y'all dont think about that but a drywall patch. You can crack your drywall by not verifying whats behind it. Or in other words, cost you time and money. 😉

The anchor goes in but when I put the screw in, the anchor comes out as the screw goes in.

Be carefull with the drill. Using a screwdriver could be a better option for some.
