Fat and flour IS a roux, add milk or cream and it’s a bechamel sauce, add cheese to that and it is a mornay sauce. So basically this recipe is hard boiled eggs with a mornay sauce. Is that a southern thing?

I went overseas as a teenager, with Teen Missions International, on a mission trip when I was 18. We were a group of 30 teens and 4 adult leaders and we were building a shower building and bathrooms for a youth camp. The older husband and wife couple, who led the team, were from Tennessee. He was a university president. His wife was a sweet woman who cooked a HUGE pot of grits for our team every morning. I'm from northern Ohio and found that I LOVED grits. But these grits had lumps. Almost golf ball sized lumps (only a slight exaggeration). I was young and it was funny at the time. Life was good. I guess that huge pot of grits was a challenge to make smooth. I watch your show every day. Thank you for being there Paula.

I would've baked some bacon in the oven next to the casserole, then chopped them up and sprinkle them over the casserole..

When I was growing up, and then, raising my sons, we had waffles for Sunday nights about every six weeks or so, and my sons loved having scrambled eggs and pancakes many Sunday nights. My husband and I eat cheesy creamed eggs over toast! I also saute onions and red bell peppers, add sausage and chopped eggs, all wonderful since I add PD House Seasoning stocked up on our trips to Savannah! Grits, biscuits, or toasted English muffin bread round it all out!

Grits are a southern thing just like biscuits and gravy are! They're so comforting and also very cheap to make!😘
I think these dishes are getting popular up north because they are seeing the comfort in them!
I've never seen a breakfast casserole made with boiled eggs before. This looks so interesting to try! I think bacon would be great crumbled on top!😚

Yes, nothing like breakfast for supper. I love the overnight French Toast Casserole. Make it in the morning and put in the fridge when you go to work and pull it out when you get home and bake it and fix some eggs and bacon or sausage to go with it.

I am 100 percent Southern having been raised in TN but I never developed a taste for grits or any other hot cereal for that matter. My loss I suppose.

This seems like a very good option instead of eggs benedict. Less messing around when you have a crew. Serve it over a english muffin with some sliced ham or salmon or bacon.
