Taking Cooking food back to basics.
Ingredients:
- For the Chicken Marinade:
- 400g boneless, skinless chicken thigh, cut into bite-sized pieces
- 1 tablespoon light soy sauce
- 1 teaspoon white pepper
- 1 teaspoon oil
- splash of sesame oil
- For the Stir-Fry Sauce:
- 1 tablespoons Oyster sauce
- 1 tablespoon light soy sauce
- 1 tablespoon Shaoxing wine
- 1 tablespoon Hoisin sauce
- 1/4 cup chicken broth or water
- 1 teaspoon sugar
- 1/2 teaspoon MSG (monosodium glutamate)
- For the Stir-Fry:
- 4 tablespoons vegetable oil
- 2-3 cloves garlic, finely chopped
- 1 small onion, cut into wedges
- 1 cup raw cashew nuts, or you can use unsalted
- 4 big dried chillies cut into 1 cm pieces
- 1/2 small green bell pepper, cut into bite-sized pieces
- 1/2 small red bell pepper, cut into bite-sized pieces
- 1/2 small yellow bell pepper, cut into bite-sized pieces
- 2 spring onions, chopped into 1-inch pieces
