« Mirepoix » in french cuisine is only a type of cutting, it’s 1cm cubes of vegetables. Smaller (2/3mm), it’s called « brunoise ».
But the mix of oignons/carrots/celery is typical from Italy and it’s called « sofrito ». :)

I am from Milan! Finally someone who can cook it perfectly!! I just give you and advice: next time put some Midollo (the part inside the bone of the meat) into the rise while you are cooking it. It will make it tastier! Great job btw seriously!
