Hmm..why my toum sauce so overpowered with garlic even using 100g of garlic..the spicy of garlic aftertaste 😔..should I need to peel the garlic and remove germ?

Hello, I wanna start a hotel in India and make some living. i want this recipe to be perfect, but the end product is too intense and spicy. i want the garlic sauce that is served in Dubai with grilled chicken and kuboos and salad. please help me. i am doing exactly what u told. I try this every week and every week I change things a little since my first try was insanely sharp. Then I removed the green part - the sharpness went down but wasn’t completely gone. What am I doing wrong? It’s never like the ones I had in the Middle East.
