lebanese here, if you're struggling making toum, you can substitute the water with chickpea can water. it will emulsify better. plus keeping the mix cold is key. some machines heat up the mixture which makes the mixture separate

Also, it's best to keep all the ingredients cold so that it emulsifies properly. I usually use 12-14 garlic cloves with quarter cup of oil, 2 table spoons of cold water, quarter teaspoon of salt and 1/2 or 1 full lime (not lemon) according to taste! If the weather is too hot, your ingredients ts should be cold, otherwise you're going to have oily garlic soup 😂 very disheartening when it splits, but when it comes right, that one time confidence is all you need!

For those struggling with seperation substitute your salt in the recipe with sodium citrate it has natural emulsions properties and will help keep your paste together and more homogeneous

best to go by weight. 80-90 grams of garlic. 1/2 tbsp salt, 2 tbsp lemon juice, 1.5 cups oil.
