I found a bread machine at a yard sale at least 15 years ago (possibly longer) for only $5.00 and it still works like a charm! Your bread looked yummy, thanks for sharing!

People should know that not only is oat fiber a bit of a laxative (your mileage may vary), it also is very soothing to the intestinal lining; just like oats are soothing to the skin after sunburn or exposure to poison ivy, it's also good for your insides. This is the ONLY recipe I've found that uses oat fiber instead of either nut flours (don't like them, tired of almonds for one thing) or carbalose which is tricky to work with and expensive. Definitely worth a try, thank you for posting this, I would have otherwise never seen it.

I’ve made this a couple times for my husband, I’ve been keto 3 yrs and he joined me first week of Jan 2020. He kept asking for bread. I finally bought the oat fiber off Amazon and made this in my Breadmaker from the goodwill. We both love it, I think it’s cheaper than buying the new low carb bread at Aldi (if you can find it! ) anyway I’m going to make this about once a week for us, slice into 18 slices, I rotate the whole loaf a quarter turn onto each side as I slice. I also let it rest after I take out of machine before I slice. We are each eating one slice a day, unless I’m doing a carnivore day. I use 4 tbs powdered sweetener. It’s a very easy recipe. My xanthan gum expired awhile ago, but everything I use it in still works lol.
We did an experiment and took our ketones and blood sugars with our KetoMojo meters throughout the day after eating and our blood sugars did not rise and we maintained ketosis.

I love the bread. It's great toasted. If you want a dryer exterior, I do a combo. I used my machine to mix and beat it. I'd cook in on a loaf pan in the oven. Nice exterior, great interior. Best bread out there. The Keto King has a great video as well.

If you swap out the flax meal flour for Lupin Flour (miracle flour), add 1/2 tblespoon extra is even better in taste.

Garage and estate sales are a GREAT place to buy all sorts of household goods - the richest neighborhoods have the best stuff. I bought an almost unused bread machine for $10 and it works fine, years later. It also is a way to recycle things that otherwise might end up in a landfill. When items don't sell at the estate sales, they're taken to the Goodwill places. It makes a nice weekend outing going hunting, too.

1 cup warm/hot water
2 beaten eggs
1/2 cup oat fiber
2/3 cups golden flaxseed meal
1 1/4 cups vital wheat gluten
1 tsp salt (Redmond's Real Salt is the healthiest and doesn't have trace radioactivity like Himilayan salts)
3 tsp sweetener (Lakanto or erithrytol) (you can put more or less of this, depending on your judgment)
1 tsp honey (or maple syrup)
1/2 tsp xanthan gum
2 tbs butter
1 tbs yeast (one packet)


This will save you 15:31 because this is a lonnng video. Why she's using liquid measuring cups for dry ingredients, I don't know but maybe (because the measurements are different) you should do the same.

I like this bread. I only use 1/8 tsp. of Xanthum gum, and I use 4T of powdered substitute sugar.

Holy cow! I made this using agave nectar instead of honey and coconut sugar for instead of monk fruit and such. it has risen so high so fluffy! it has zero aftertaste! this tastes better than any bread I've ever bought before! I couldn't wait for it to cool!

I am late to the party but made this bread with identical results except unplugged the machine (mine has a warmer built in) & removed the loaf from the machine allowing it to cool for 30 minutes & had no baking fall. Bread came out excellent. Read in the comments below & will sway out Flax for Lupin Flour next loaf increasing yeast content as advised.

My machine made the tall loaves too. We sliced it from top to bottom, the slices were square. I mostly used it to make the dough rather than bake it. I have a long narrow loaf pan it makes a "regular" sized slice of bread. I'll try this bread recipe. I'm diabetic and trying to reduce carbs. I like a sandwich, the store bought bread is 36 carbs for 2 slices, that is my full carb count for 1 meal. So my Dr says 1 slice for a sandwich! Starving me. lol You should remove the loaf when it is finished baking, otherwise it will sweat & the sides cave in like an old man's face when he's not wearing his teeth. lol! My hubby doesn't eat the heels (end slices). I eat one heel while it is warm. I usually divide the dough in half and make a double bun loaf in my long pan. I find it is too much dough for a regular single loaf pan. I used to cut off enough dough for 3 or 4 rolls and drop them in a frying pan with a bit of oil, you just cut a junk off and right into the pan hand it carefully, no kneading. I would say handle it like it is a ball of baby chick feathers that you don't want stuck to your fingers. It is so good when browned up on all sides, maybe 3 sides, maybe 4 sides, it just depends how it lands in the pan. Mom would fry these cut wedges and called them scones when the bread wasn't ready to bake before lunch. My son loved eating fried bread. Some good!
