gotta love jerk chicken

8 whole legs recipe:
2 green onions
3 scotch bonnet peppers
8 gloves on garlic
half white onion
half red onion
5 slices of fresh ginger
1 tbsp of cinnamon
1 tbsp of black pepper
1 tbsp of all spice
1 tbsp of nutmeg
4 tbsp of brown sugar
2 teaspoon of salt
6 bay leafs
1 cup of soy sauce
1/2 cup of worcestershire sauce

1. Try cooking it with a broiler use a cast iorn pan coated with foil let it cook on one side for 15 to 20 mins and the flip and cook for another 10-15. It's a good way to emulate the smoke fire flavor. What' the recepie you use I'd like to try it please.

Try dry roasting your onions and peppers. If you get a good char on them that can give you a slight smokey taste.

I’ve been working on my marinade too. I use charcoals, but it’s mostly oak and Hickory where I live. So not the real thing either. But damn good.

You can put the chicken right on the top rack and alot of foil on the bottom rack or put scewers through the chicken and put it on the cooking pan that you used in this vid. The scewers will go from edge to edge and keep your chicken up off the bottom.

Put a piece of charcoal that’s been lit partially wrapped in foil in the dish and cover. You will add a Smokey flavour.
