Welcome to Open Fire, where we explore the various ways different cultures cook over live fire, as our host Cara Nicoletti, a fourth-generation butcher, learns the craft, practice, and philosophy of each dish.

In this episode, Cara meets with chef Junior Felix from Glady’s in Brooklyn to learn how to cook his famous jerk chicken. This chicken is marinated for 24 hours before it’s grilled over oak and pimento wood and finished off in a smoker, resulting in a dish that’s truly the flavor of fire.

Glady's is AMAZING. My gf works across the street and we've been there a bunch. The chicken is obviously incredible, but don't sleep on the pork or the curry goat either. Extra spicy slaw, rice and peas. A painkiller to wash it down. Excellence. I'm gonna try the pepper shrimp next go round.

You can tell this man loves what he does. Ain't no way that food won't taste amazing. He could probably season the meat with water alone and it would still taste delicious!

I am Jamaican and I can attest that all the islands in the Caribbean got great food. The food in the Caribbean can go toe to toe or even best other regions when it comes to food. Absolutely amazing. Cuba, Jamaica, Trinidad, Puerto Rico, DR, Barbados, Antigua, Haiti etc. The Caribbean is the bomb.

The pimento tree is believed by some to be the tree of Life as the bark that naturally peels has health benefits, the berries to make liquor and pimento spice (allspice), leaves are full of health benefits, and oils produced When burning as wood is used on cuts and other things.

The best jerk chicken and pork that I’ve ever had was in Montego Bay, Jamacia at a place called Scotchies. They use pimento and sweet woods and is seasoned to perfection!

When you put love into anything you do like that—this man clearly does so by paying very close attention to even the smallest of details, lowering and raising the grill, wetting the wood 🪵 chips, etc..The result will always be show it! Will definitely pay him a visit. Blessings!
