Things that grow under the ground are usually very dense so if they're started in cold water, the water slowly heats up and slowly heats up the dense vegetable at the same time. If you start dense vegetables in hot water, the outside portion of the veg will overcook by the time the centre of the veg is cooked properly.

The opposite holds true for things that grow above the ground. They are usually less dense so they only need to be flash-heated in hot water to cook to the desired doneness. If you started them in cold water, much of the flavour would leach out by the time the veg comes to temp - and be mushy.

Salt is for flavour.

Even veggies are picky about baths. Cold for underground and hot for above. They’re such divas.

Hey Andy, thanks for the tips! Could you please make one explaining where to position an oven tray depending on what you are cooking, cause many recipes don't exactly say how high or low to place something when cooking with the oven! Thanks again.
