Small tip for folks doing chasu at home - you can just slow roast it ahead of time and then soak it in the marinade AFTER cooking overnight in a plastic bag. Typically that allows you to make it ahead of time and it vastly deepens the flavor as the fat and meat take in more of the aromatics.

The fact that you took the time to make the chashu properly 😭 you have no idea how surprised I was to see it tied up, a lot of places I like does it that way especially Yokohama style tonkotsu ramen. Love from Tokyo~
