Today we're going to talk about red and green cabbage differences. I'm also going to tell you which type of cabbage is healthier. 

Red cabbage vs. Green cabbage: 

Benefits of red cabbage:
• 10 times more vitamin A than green cabbage 
• More Vitamin C than green cabbage (sauerkraut has about 10 times more vitamin C than unfermented cabbage)
• 2 times more iron than green cabbage 
• Anthocyanins (ant-cancer, anti-inflammatory, reduces free radical damage)

Benefits of green cabbage:

• More vitamin A than red cabbage 

Both green cabbage and red cabbage contain:

• Phytonutrients 
• Sinigrin—sulfur (anti-cancer)
• Polyphenols 
• Flavonoids 
• DIM 

One of the biggest health benefits of cabbage (both types) is for:

• Ulcers and gastritis (juice of the cabbage, sauerkraut, coleslaw)

More cabbage benefits:

• Cabbage is good for the blood sugars 
• Cabbage can help balance estrogen dominance 

Which type of cabbage is healthier?

Both red cabbage and green cabbage are healthy. Red cabbage has a little bit more nutrients. I actually recommend consuming both types of cabbage.

I ferment my own red and green cabbages which I grow in my garden organically. So for me I love them both. I also do cole slaw with a tiny bit of my homegrown carrots as they’re higher in carbs. Yummy

I grow 36 heads of cabbage a year and ferment 10 gallons of saurkraut a year. I prefer to form my own retinol.

In the area I grew up red cabbage salad is a local specialty. I loved it! But I haven't eaten it for years and I need to find how to prepare it. Thanks for reminding me 🙂

Once when I was a wee child I got caught in the veggie bin after bedtime eating raw cabbage! At the time I got scolded, but now my mom kicks herself for that! She said “what was I thinking?” She said actually it was so cute! Little girl in the dark kitchen eating raw cabbage right out of the refrigerator! I still love it more than ever!!

I make my sauerkraut 30/70 red/green and also add grated turmeric, ginger and garlic. All organic as well. Then I use Celtic sea salt to finalize it. I weigh my mixture and multiply the grams by .02 which I find is the perfect amount of salt to start the fermentation process. This wonderful sauerkraut has a definite bite to it and for me it has really helped heal my gut!

Ferment them, both are beautiful! Add mustard seeds, juniper berries, etc. I add spinach and seaweed. Pepper and Tumeric too. It's anti kryptonite!

I love eggroll in a bowl. It only takes 30 minutes to make a very filling lunch with the cabbage blend, a lean ground meat, sesame oil, and rice vinegar.

Love my cabbage!!!! In Hawaii. We have plate lunches and most of the time it was used as a garnish under a protein or they serve a side of Kim chee. Because there was teriyaki sauce on the cabbage, it made it more delicious. It’s nice to know their health benefits.
