2 onions
2 carrots
2 celery sticks
6 garlic cloves
1 large large thumb of ginger
5 star anise pods
6 whole cloves
1 tsp coriander seeds
1 tsp fennel seeds
1 cinnamon stick
30g dried shitake mushrooms
2 tbsp maple syrup
1/4 cup soy sauce (coconut aminos)
nori sheets
6-8 cups of water

Toppings
Thai chillies
spring onions
Limes
Bean sprouts
Coriander
Sriracha or Vegan Hoisin

I followed this recipe and the broth is truly the star! The depth of flavors is ridiculous. It was so good, I froze some and have used it for frozen dumplings for days when I don’t feel like cooking. Thank you again so much 🍲

Nice!! British Vietnamese here. I grew up eating my mama’s beef pho and haven’t had pho since I stopped eating meat. My family are from the north of Vietnam and they don’t usually put bean sprouts in this dish, but I am open to the idea. Northern pho is more salty than southern pho which is supposed to be sweet too. Will definitely cook a vegan version for us now. Thank you for sharing your recipe. And Lol @ “no one come for me there are no chopsticks in my house”.

Empty out a tea bag and re staple it instead of using a strainer. You can also reuse tea bags a couple times is you rinse them out well

Love the way you plate the soup. (Never knew soup could even be presented in an extra eye appealing manner. Your expressive descriptions of the aromas make it seem as though I can smell the the scents.

I like to add Thai basil, Fresh Mint and coined Jalapenos to mine... Oh so yummy. I grew up near Seattle and there is a large Vietnamese population and so many Pho restaurants to choose from.

You always make the best looking dishes, that rich dark broth looks heavenly 😍 I know the black charred bits aren't healthy for us but they taste so good to me, especially on vegetables like onions and bell peppers.

thanks for this recipe! I'm not too fond of mushrooms, but i think i will give this a chance. i never thought to put my spices in a strainer while the broth cooks! genius.

I love your recipe and would SO eat it if I was Vegan. For now I'm still a Flexitarian and still eat small amounts of farm-raised, locally sourced beef, lamb & birds and therefore, must include a delicious, nutrient-rich bone broth in my pho. But I do have mad respect for all of you that are strictly Vegan!
