It's monk Gyatso. The opening credits were supposed to be all Aang Bending Teachers. Master Pakuu, Sud, Azula and finally Gyatso. Sud was rectconned to Avatar Roku's teacher and Azula was changed to Zuko when they gave him the redemption arc.

You got it backwards. The original concept for Aang was for him to be from a technologically advanced *past* and finding himself in a post-apocalyptic primitive future that reverted to a medieval level.
