I completely agree. I am 26 and ive been working as a butcher since i completed my apprenticeship at 18. I have ALWAYS highly reccomended skirt steak to customers. Another similar cut that is even better than skirt steak and less known is hanger steak. A good hanger steak is prolly one of my favorite cuts of beef.

Correction; due to food youtubers over the last 5 to 10 years advocating skirt steak, the old cheap cut of beef is now expensive. I used to get it for under 3 dollars a pound. Now it's over 8 a pound. It's nuts.

In Spanish it’s often called Arrachera and it’s by no means cheap! At least not here in San Diego

I adore skirt, it along with flank has arguably the most flavor of any readily avalable cut and can be is used in so many dishes and different cuisine styles.

Skirt and flank are my 2 favorite cuts. I started butchering in 2002. There is a reason these steaks aren’t sold in steakhouses. It’s because there is only 4 total skirt steaks on a cow. 2 inside and 2 outside skirts. One of each in each side of the carcass.
